Typically added during secondary fermentation during the aging stage, these cubes require a longer contact time than the traditional oak chips, making these more suitable for long term aging beers (Saisons, Farmhouse Ales, Belgian Strong Ales). Longer contact time means longer extraction of flavours (3-6 months), which will lead to a much more complex and smooth combination of flavours and aromatics.
